This quest took over two years of research in new winemaking technology and innovation, followed by extensive tasting evaluation before he found the key. The result is Cense Cellars, original and premium wines that deliver on delicious fruit flavors, with reduced calories and sugar compared to standard wines. Cense wines start with traditional wine of higher alcohol content, with ripe, fruit-forward flavors, and soft, smooth tannins. We then use proprietary technology that gently captures the compounds that make up the flavor and aroma of a wine, holding them aside while removing excessive alcohol. This process allows us to reduce both calories and SmartPoints® Value per serving without compromising the quality or flavor of the wine in our bottles. The Grapes Cense Sauvignon Blanc grapes are grown in Marlborough, New Zealand, one of the most highly acclaimed wine regions in the world. This region benefits from long, sunny days balanced with brisk sea breezes to create a slow growing season, allowing the fruit to reach full maturity and ripeness at its own pace. Cense Rosé grapes are grown in California, primarily from the north and central coast regions. These coastal areas are renowned for their long growing seasons characterized by warm sunny days followed by cool foggy evenings and mornings. This climate provides grapes with a delightful balance of fruit and acidity. Cense Sparkling grapes are grown in California. Our sparkling wine uses the traditional méthode champenoise which is when a secondary fermentation happens in the bottle, which produces the freshest and best tasting Champagne and sparkling white wines. Cense Cabernet Sauvignon grapes are 100% Cabernet from the Paso Robles region of California. With a greater day-to-night temperature swing than any other appellation in California, distinct microclimates, diverse soils and a long growing season, Paso Robles is a unique wine region blessed with optimal growing conditions for producing premium and ultra-premium wines. Meet Haydn As a New Zealand native, Haydn became involved in wine by working a harvest helping to produce Pinot Noir, Chardonnay, and Riesling at Gibbston Valley Winery in Queenstown, New Zealand in the mid ‘90s and found that his love for wine changed his life. After working a harvest season, he went on to earn his undergraduate degree in enology and viticulture at Lincoln University. Haydn then continued his winery career in Okanagan B.C. at Hawthorne Mountain Winery, then moved to California where he became a Cellar Master in 2002 at Seven Hills and was quickly promoted to Associate Winemaker. In 2011, Haydn moved up to Washington State to join the Waterbrook Winery team under John Freeman. Haydn continued to carry his passion for making wines that are delicious, memorable and exciting to drink over to Canoe Ridge Vineyard as Head Winemaker and in 2017 joined the innovation Cense team to create our premium low-calorie wines. In his free time Haydn is also an avid skier who enjoys Walla Walla's close proximity to the Blue Mountains.
